Cheesy Cauliflower Soup
1 medium cauliflower chopped into florets
1 red pepper, chopped
1 small onion, chopped
1 medium carrot, shredded
1/4 C chopped celery
2 1/2 C water
2 tsp Better Than Bouillon

3 TBS butter
3 TBS flour
Salt & Pepper to taste
2 C 2% milk
1 C shredded cheese
1 tsp Ray’s Polish Fire or Divine Mesa, or more to taste.
- Combine first 7 ingredients into soup pot.
- Bring to gentle boil for 12 min.
- Meanwhile make the roux: melt butter, stir in the flour. Cook & stir to combine. Add milk, cook & stir for 2 min until thick. Stir in cheese.
- Add roux to soup mixture.
- Add the Ray’s to taste.
